Cake:
2 cups flour
2 cups sugar
1/1/4 tsp baking soda
2 eggs
1 20-oz can crushed pineapple with juice

Icing:
1 1/2 sticks butter
1 can evaporated milk
1 1/2 cups sugar
1 cup nuts (pecans or walnuts if you don't have pecans)
1 cup flaked coconut

Directions:
Directions:
Cake: Preheat oven to 400 degrees
Mix ingredients together and pour into greased 9x13 inch pan and bake for 35 minutes.
Prick with fork all over and pour icing on while still warm.

Icing:
Melt butter in large pan. Add milk and sugar. Boil for 10--15 minutes. Stir in nuts and coconut. Pour on warm cake

Fredericktown had a restaurant in the 70's called The Spice of Life on the corner of Main and College Street. We usually called it the Spice of Lice, because nothing much was good there. One recipe that they knocked out of the park was this cake. After several years of pleading, they finally shared the recipe so that we could add it to the Tomato Show Cookbook.
