rotisserie chicken, shredded or 2 chicken breasts, grilled
1 pkg penne pasta
1 11oz container of pesto with basil (or make your own)
balsamic vinegar
1 pkg sliced mushrooms
1/2 red onion, sliced thinly
1-2 cups fresh green beans
shredded Parmesan cheese

Grill chicken as you like it or shred an already cooked rotisserie chicken. Cook pasta according to package. Add green beans to pasta water during the last 2 minutes. You want them to still have crunch. Remove pasta and beans. Marinate mushrooms and onions in balsamic vinegar while pasta is cooking. Once pasta is done, mix together with chicken, pesto, mushrooms, green beans and onion. Combine. Add more balsamic vinegar and salt and pepper, to taste. Sprinkle with Parmesan.
