3 cups flour
1 1/4 cups sugar
4 beaten eggs
3 tsp. baking powder
1 tsp. vanilla
1 tsp. anise extract
1 tsp. lemon extract
1 tsp. almond extract
1/2 cup (1cube) butter
silvered almonds are optional and can make the cookie difficult to cut

Directions:

Cream butter and sugar(a large serving fork works very well)
Add eggs and flavorings stirring into the creamed mixture
Add cry ingredients
Mix together to form a better
Spoon mixture onto an ungreased cookie sheet, creating two long logs around 3 inches apart
Bake at 350 degrees for about 15 to 25 minutes until a light golden brown in color(check after 15 minutes)
Remove from the oven and cut the logs into diagonal slices
Turn the cookies on their sides, baking again until edges are a light brown--about 5 to 10 minutes
Remove from the oven and turn the cookies over on their reverse side baking again for about another 5 minutes
NOTE: The more color the biscotti have the crispier they will be.

Luisa Roselini was born in Castervecchio, Provenza di Lucca, Italia in 1888. She emigrated to the United States with her new husband, Arturo Bastiani who was born in Boveglio, a stone's throw from Castelvecchio. settling in a lumber camp in Korbel, California in the early 1900's where they had 3 children. The camp was populated by a work force of Italian "Toscani" immigrants. To better their situation, the family left for Oakland ,settling in an Italian district of West Oakland. Arturo working as a carpenter and Luisa opening a school store to feed hot lunches to Prescott and St. Patrick's school children.
