2 tbsp vegetable oil
5 tortillas, cut 2 into thin strips and tear remaining in large pieces
1 onion, diced
6 garlic cloves, minced
29 oz diced tomatoes
8 cups chicken stock
1 1/2 tbsp cumin
1 tbsp chili powder
1/2 tsp cayenne
4 bay leaves
4 boneless chicken breasts, uncooked
1/2 cup cilantro, chopped
14 oz frozen corn
juice from 1 lime
shredded cheddar cheese, for garnish

Directions:
Directions:
In slow cooker combine onion, garlic, 2 cans diced tomatoes, 8 cups chicken stock, cumin, chili powder, cayenne, bay leaves and chicken. Stir to combine.

Cook on low for 6-8 hours or high 3-4 hours, or until chicken is cooked through.

30 minutes before eating, remove bay leaves and shred chicken. Add frozen corn, fresh cilantro, lime juice and 3 torn tortillas. Cook for 30 more minutes.

Heat oil and add strips of remaining tortillas. Cook until crispy.

Serve with sprinkled cheese and tortilla chips on top.
