1. 5 chicken breasts cut in pieces/ I used 2 bags of veggie chicken.
2. 1 tablespoon chopped garlic
3. 6 cups vegetable broth
4. 2 cans cream of chicken soup/ I used 3 cans cream of celery soup
5. 1 stick of butter (sliced)
6. Salt, pepper and Emeril's chicken rub or Italian seasoning.
7. Carrots, diced potatoes, celery, and onion
8. Bisquick or baking mix for dumplings/ I used one can of Pillsbury biscuits

1. Season with salt and pepper little by little as you go
2. Add your garlic, vegetable broth and butter to the crockpot.
3. Add all of your vegetables and place cut up chicken on top.
4. Mix creamed soup and 1 cup of water and pour over all ingredients
5. Cover and cook on low heat for 5 hours.
6. The last 30 minutes, add your dumpling mix (follow directions on bisquick box) by dropping spoonfuls of mix in the crock pot, or just pull Pillsbury biscuits apart into about 8 pieces and put on top. You may need to add more chicken broth as it cooks if you like more of a broth.

Mom’s tip: To ensure your dumplings cook thoroughly and are not gooey, turn the crockpot up to high heat with 45 minutes left to bring to a boil. Then add your dumplings and leave them covered for 10 minutes on high heat. After 10 minutes, turn heat to low and remove the cover partially to allow steam to escape. You will need to turn you dumplings over with a spoon at this point to cook the underneath side. Season dumplings with italian seasoning or just parsley once they are done.
