1 (15 oz.) can chickpeas (garbanzo beans), rinsed and drained
1 clove garlic, minced
1/4 c. olive oil, plus more for serving
2 T. fresh lemon or lime juice
2 T. tahini (sesame seed paste), optional
1 tsp. ground cumin
Kosher salt
1/4 tsp. paprika, optional
Roasted red peppers, optional

Directions:
Directions:
In a food processor, purée the chickpeas, roasted red peppers (if using) and garlic with the olive oil, lemon juice, tahini (if using), cumin and 3/4 tsp. salt until smooth and creamy. Add 1-2 T. water as necessary to achieve desired consistency. Transfer to a bowl. Drizzle with olive oil and sprinkle with paprika (if using) before serving.
