1/2 c. chickpeas, rinsed and drained
1 T. shaved raw red or green onion
1/2 c. diced cucumber
1/4 c. diced tomato (optional)
2 T. green pepper, diced
1 T. chopped parsley

Dressing:
1 T. vinegar of choice
3 T. oil of choice (olive, coconut, grape seed, etc.)
Coconut Aminos Soy-Free Seasoning Sauce to taste
Oregano, thyme or other herbs to taste
Himalayan or sea salt to taste

Directions:
Directions:
Mix salad ingredients in a large bowl. In a separate bowl, mix dressing ingredients. Add desired amount of dressing to salad and mix well.
