3 tbsp olive oil
2 eggs, whisked
2 medium carrots, chopped
1 small white onion, diced
1/2 cup frozen peas
3 cloves garlic
salt and pepper
4 cups cooked quinoa (cooked in chicken broth)
3-4 tbsp soy sauce, or more to taste
1/2 tsp toasted sesame oil

Directions:
Directions:
Heat 1 tbsp olive oil in large skillet over medium heat until melted. Add egg and cook until scrambled. Remove egg for later.

Add remaining olive oil and heat. Add carrots, onion, peas and garlic and season with salt and pepper. Saute for about 5 minutes or until onion and carrots are soft. Increase heat and add quinoa, soy, eggs, and sesame oil. Stir to combine and heat all the way through.

Serve warm.

Beau's favorite way to eat peas! I make it often in order to be sure he's eating something green :) I usually make it using frozen peas and carrots and sometimes broccoli.
