1 chopped onion
1 chopped green pepper
1 cup uncooked rice
3 tbsp. oil
2 cans Campbell's chicken broth
2 cans water
1 (4 oz) can chopped green chilies
salt and pepper to taste
1/4 to 1/2 pound Velveeta cheese

Directions:
Directions:
Brown onion, pepper and rice in oil. Add broth, water and chilies. Simmer until liquid is absorbed. Add salt and pepper to taste. Cover with sliced Velveeta and simmer until cheese melts. Mix well and serve.

For a main dish, add 3 chopped, cooked chicken breasts then bake at 350º until cheese is browned.

This was one of Aunt Peg's "signature dishes" that she almost always brought to potlucks and family dinners. It's also a favorite of mine from the original Wilson cookbook.
