2/3 c. cooking oil
1 c. sour cream
1 c. creamed corn
1 1/2 c. self-rising corn meal
1 tsp. baking powder
1 tsp. salt
2 eggs
1-2 tbsp. jalapeno peppers from jar of chopped peppers
2 c. grated cheddar cheese (1 c. in batter and sprinkle other on top

Mix all ingredients and put in greased iron skillet or rectangular pan. Bake at 350º for 45 minutes.
