2 1/2 Tbsp margarine
3 Tbsp flour
1/2 c chicken stock or consomme
1/2 tsp salt
1/4 tsp white pepper
1/2 c heavy cream
2 c crab meat
1/2 c tarragon, finely chopped
2 tsp parsley, finely chopped

Directions:
Directions:
Melt 2 1/2 Tbsp margarine in a pan. Stir in flour and mix until smooth and brown. Stir in chicken stock and boil for 1 to 2 minutes. Add salt and pepper. Stir in cream slowly. Remove from heat. Flake the crab meat lightly with a fork. Remove all fibers. Add crab meat, tarragon, and parsley to cream sauce. Mix. Spread on platter to cool. Form into small balls. Freeze or refrigerate.

When ready to use: Saute lightly in butter until light brown. Use a chafing dish to keep warm. Serve on a wooden toothpick.
