1/2 lb dry northern bean's (soak in cold water over night)
2 Tbsp olive oil
2 carrots, diced
1 large onion, diced
2 qt chicken broth
1 Bay leaf
1/2 lb mustard greens

Directions:
Directions:
Drain and rinse beans. Saute carrots and onion in olive oil in a large saucepan until soft. Add broth, bay leaf and bean's, cover and simmer for 45 minutes. Discard sterms and center ribs from mustard greens and cut 2 inch strips. Stir in greens cover and cook 25 minutes or until beans and greens are tender. Discard Bay leaf.
