3 eggs, beaten until fluffy
2 cups zucchini, grated
2 cups sugar
1 cup oil
2 teaspoons vanilla
3 cups flour
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder

Directions:

Preheat oven to 350 degrees. Mix all ingredients together.

Bake at 350 degrees for one hour.

I’d like to think every family is lucky enough to have a matriarch who truly leaves a wonderful and warm impression on her family as well as all those around her. My family has certainly been fortunate in that regard and my great grandmother, Audrey Caroline Morris, will forever hold a special place in my heart. She was a loving wife, a wonderful mother, a doting grandmother, an accomplished Nurse, and Administrator for the Lancaster County Red Cross; and I and the rest of her family is quite proud of the legacy she’s left behind.

Along with her many other accomplishments, a great cook was a description she was given often. Her zucchini bread is a recipe that we were lucky enough to hold onto and one that is used constantly. I grew up walking into my family’s kitchens with this wonderful aroma floating through the air, thanks to Grandma Morris. Her original recipe hangs framed in my mother’s kitchen and I’d love nothing more than to share that experience and this recipe with my fellow Junior Leaguers to enjoy as well!
