4 extra large egg whites, room temp.
1/8 tsp. baking powder
1/8 tsp. cream of tarter
1-1/4 cups sugar
14 graham crackers, broken into 1/2" pieces
1 cup pecan pieces
1 cup whipping cream
1/2 tsp. vanilla

Directions:
Directions:
Heat oven to 300 deg. Lightly grease 9-inch pie plate. In a large bowl, beat egg whites and baking powder until soft peaks form. Add cream of tarter, beating constantly. Add 1 cup of the sugar, a tablespoon at a time, beating constantly until stiff peaks form. Using a rubber spatula, fold in graham crackers and pecans. Spoon into pie plate. Bake 30 minutes, or until toothpick inserted into the center comes out clean. Cool completely.

In a chilled bowl, using chilled beaters, beat cream just until it begins to thicken. Add remaining 1/4 cup sugar and vanilla and continue to beat until soft peaks form. Top pie with whipped cream. Refrigerate until served.

This is an old Luby's recipe called Butterscotch Pie. When Luke was little this pie was his favorite so we renamed it Lukie Pie.
