Turkey Soup Recipe

Add:
6 cups cold water
1 cup celery leaves and pieces
2 sprigs parsley
1 large onion, sliced
1 large carrot, sliced
2 tsp. salt
3 peppercorns (or pepper to taste)
1 bay leaf
1 tsp. poultry seasoning

Directions:
Directions:
Break apart carcass of leftover turkey or chicken and place in large pot along with skin and trimmings.
Add the above ingredients.
Bring to boil, cover, reduce heat and simmer for 3 hours. Remove bones. Strain broth through sieve. Cool quickly and refrigerate. Remove fat.
Measure and make up volume to 6 cups with vegetable or chicken stock.
Add:
1 (12 oz.) package frozen mixed vegetables. Or cut up fresh vegetables.
1/3 cup minute rice
diced leftover turkey

Bring to boil, cover, reduce heat and simmer for 15 minutes.
Season to taste.

Note: For a large turkey carcass, allow 8 or more cups water. Increase vegetables and turkey accordingly.

With turkey soup you can add almost anything to make a good soup once you have the stock made. I sometimes add pasta instead of potato or rice.

This soup will freeze well too. Or if you don't have time to make the soup right after the big turkey dinner, then freeze the carcass.
