1/2 cup shortening
1/2 cup peanut butter
1/2 cup white sugar
1/ cup lightly packed brown sugar
1 egg
1/2 tsp. vanilla
1 1/4 cups flour
1 tsp. baking soda
1/2 tsp. salt

Directions:
Directions:
Preheat oven to 375 degrees. Cream together shortening and peanut butter. Gradually beat in white sugar and brown sugar. Add egg and vanilla. Beat well. Add flour, soda and salt which have been sifted together and combine thoroughly.
Shape dough into balls which are about 1 inch in diameter.
Place on baking sheet ( line with parchment paper) Press down with a fork which has been dipped in warm water.

Bake 10 - 12 minutes.

This is the only Peanut Butter Cookie Recipe I use. I always double this recipe!
It is from a cookbook published in 1975 by the Kentville Silver Gliders Figure Skating Club. This recipe was submitted by Doris Davidson. I wonder if I have ever told her how much I love these cookies!
