2 medium tomatoes, seeded and chopped
1/4 chopped arugula leaves
1 small onion, finely chopped
1/4 cup snipped basil
1 clove garlic, minced
1 tbsp olive oil
1 tbsp balsamic vinegar
1/4 salt
1/4 pepper

Directions:
Directions:
In a medium bowl combine tomatoes, arugula, onion, basil, olive oil, balsamic vinegar, salt and pepper. Let stand at room temperature for 1 hour.

Preheat oven to 425ºF. Slice bread into 1/2 inch thick slices. Lightly brush both sides with olive oil. Place on baking sheet. Bake for 5-7 minutes, turning once. Cool and serve with tomato mixture.
