1 lb. ground beef or chuck
1 medium onion, chopped
2 cloves garlic, minced
1 can condensed tomato rice soup
1 - 4 oz.can chopped green chiles,drained
1 T. vinegar
2 tsp. chili powder
1 tsp. cumin
8 - 8" flour tortillas
1 c. shredded Monterey Jack cheese
cover bottom of 10" skillet 1" oil to fry
shredded lettuce & green onion bits
chopped green onions for topping

Directions:
Directions:
Cook ground beef, onion & garlic in skillet. Pour off fat if needed. Stir in soup, chilies,vinegar, chili powder & cumin. Reduce heat & simmer 10-15 minutes until most of the liquid is evaporated. Remove from heat and let cool slightly.

Assemble only 2-3 at a time: Spoon 1/4 c. filling down center of tortilla. Top with 2 Tbsp cheese. Fold in sides of tortilla & roll up around filling. Secure with toothpicks.

In 10-inch skillet, heat 1 inch oil to 350 degrees. Fry chimichangas 2 minutes or till golden. Turn them once & put on paper towels to drain. Garnish with lettuce & green onion bits.
