Saltine Toffee Recipe

50 saltine crackers
2 sticks butter, cubed
1 cup light brown sugar, packed
2 cups chocolate chips
1 cup M&M's, chopped nuts or sliced almonds

Directions:
Directions:
Preheat oven to 325. Line a cookie sheet with foil. Spray with non-stick spray. Line the pan with the saltine crackers.

Place the butter and sugar in a medium saucepan over low medium-low heat. Stir until the butter is melted. Once the butter has melted, bring to a boil for 2-3 minutes, stirring constantly. Once it is nice and bubbly, remove pan from heat and pour evenly over the crackers. Spread mixture with a knife. This doesn't have to be perfect as it will spread evenly in the oven. Place in the oven and bake for 6-8 minutes.

Remove from oven and sprinkle the chocolate chips on top of the toffee while it is hot. Let the chocolate melt for a few minutes and then spread over the toffee with a spatula. Sprinkle whatever topping you would like and then place in the freezer to harden for 30 minutes. (Red & green M&M's are cute for Christmas). Store in air-tight container.
