3 eggs, beaten
2 cups sugar
1 cup vegetable or canola oil
2 cups grated zucchini, unpeeled
2 cups flour
1/4 tsp. baking powder
1 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. vanilla
1 cup chopped nuts (walnuts or pecans)

Preheat oven to 325 deg. Grate unpeeled zucchini & drain well. Squeezing in paper towels works well. Mix together eggs, sugar & oil. Beat thoroughly. Stir in drained zucchini. Sift together flour, baking powder, salt, soda and cinnamon. Set aside 1/2 cup of the flour mixture. Add the rest of the flour mixture to zucchini mixture. Stir to mix well. Add vanilla. Mix the reserved flour with the nuts and add to batter. Mix well. Pour into 2 greased and floured loaf pans. Bake at 325 for 50-60 minutes, or until toothpick inserted into the middle comes out clean.
