2 ripe beefsteak tomatoes
3 1/2 oz mozzarella cheese
2 avocados
fresh basil leaves, torn into pieces
20 black olives
(optional.) add artichoke

Dressing
2 tbsp olive oil
2 1/2 tbsp lemongrass balsamic vinegar
1 tsp coarse grain mustard
sea salt and pepper

Directions:
Directions:
Cut the tomatoes into thick wedges and place in a large bowl. Drain the mozzarella cheese and cut into pieces. Cut the avocados in half and remove the pits. Cut into slices, then arrange the mozzarella cheese and avocado with the tomatoes.

Mix all the dressing ingredients together and whisk well, drizzle over the salad. Sprinkle the basil and olives over the top and serve.
