1 can salmon
1 egg - beaten
Cracker/bread crumbs (I use ritz crackers)

Directions:
Directions:
Drain liquid from salmon and remove bones.

Break up salmon and put in bowl with beaten egg.

Mix.

Crush crackers.

Form salmon into patties and roll in cracker crumbs.

Heat a little oil in skillet (just enough to cover bottom) and fry on medium heat about 15 minutes (5-7 minutes on each side.)

This was part of Grandpa Eric's favorite meal. I would serve it with fried potatoes and of course, corn.
