2 cups white sugar
3/4 cup mazola oil
3 eggs beaten
2 cups flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
2 cups coconut
1 can crushed pineapple undrained
2 cups grated carrots

Directions:
Directions:
Mix dry ingredients together. Set aside.
Beat sugar, oil and eggs together until creamy
Stir in coconut, carrots and pineapple with juice.
Add dry ingredients a little at a time.
Mix until all blended.

Bake in 350º oven for 45 minutes or until top is firm and toothpick comes out clean.
Let cool then frost with the following cream cheese icing:

1/4 cup butter
4 oz. package cream cheese
1 1/2 cups icing sugar
1 tsp. vanilla
Cream butter, cheese together then gradually beat in sugar until creamy. add vanilla.
Enjoy!

I usually use my tube pan but you can also use a 9 by 13 " pan. It will take a bit longer to bake in the tube pan. This cake is very moist and delicious!
