2 tbsp butter
1 onion
2 leeks
2 tbsp flour
4 cups chicken stock
3 potatoes
Optional: 1 cup milk

Directions:
Directions:
Melt butter and add rough cut onion and leek. Sweat onion and leek until soft. Add flour and cook 2 minutes stirring. Gradually add stock. Add potato and bring to a boil. Simmer gently for 30 to 40 minutes or until potatoes are soft. Puree and add salt and pepper to taste. For cream soup, add one cup milk.
