For the cake:

2 1/2c blanched almond flour
1/4 tsp salt
1/2 tsp baking soda
1/2 c pecans, coarsely chopped
1/2 c raisins
1/4 c coconut oil or butter
1/4 c maple syrup
2 eggs
1 tsp vanilla

Topping:

3 tbsp cinnamon
3 tbsp coconut oil
6 tbsp maple syrup
1/2 c sliced almond or chopped pecans

Maple drizzle:

3/4 c coconut butter
1/4 c maple syrup
1/4 a 1/2 c almond milk or coconut milk or heavy cream

Preheat oven to 350ºF. Grease an 8" pan.

To make the cake:

Mix the almond flour, salt, baking soda, pecans and raisins in a large bowl. In a small bowl mix the wet ingredients coconut oil, maple syrup, eggs and vanilla together. Make a well in the dry ingredients and pour the wet ingredients into the well. Once combined pour into the greased dish.

For topping:

Mix all of the topping ingredients together. Pour over top of the cake. Put in the oven for 25-30 min or until the toothpick comes out clean.

Maple drizzle:

In a saucepan over medium - low heat, mix ingredients together. It should be thin consistency of being able to drizzle over the cake. When the cake comes out of the oven , drizzle over it.

This cake tastes good with or without the drizzle. I didn't put the drizzle on the one I made. Super easy and tastes great.
