1/2 margarine, softened
3/4 cup granulated sugar
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup mashed bananas, 3 - 4 bananas
1 cup chocolate chips
*can add 2 tbsp ground flax seed*

Directions:

Bake at 350ºF.

Mix margarine, sugar and vanilla. Add eggs, one at a time. In separate bowl, stir together, flour, baking soda and salt. Add 1/2 of flour to margarine and egg mixture, mix well. Add 1/2 of mashed bananas. Mix in remaining flour mixture and rest of the bananas. Fold in chocolate chips. Fill paper lined muffin cups and bake for 25 minutes. Makes 12 muffins.
