1 med, Eggplant-peel & cut into 1/2 in. cubes
1 lg, Green Pepper-cut into strips
1 lg. Onion- sliced
2 med. Zuchinni-cut into 1/4 " slices
2 or 3 lg. Tomatoes- peel & cut into wedges or 16 oz can (drained)
3 tbsp Olive Oil
1 Garlic Clove-minced
2 tsp. Parsley- minced
1 tsp. Basil
1 tsp. Salt
1/8 tsp. Pepper1 Bay Leaf

Directions:

Mix in a 3 qt. casserole
eggplant,green pepper, onion,oil and garlic
Cover and microwave on HIGH---5-6 min.
onions should be transparent
Add zuchinni-stir & cover--microwave--5 min.
gently stir in the remainder
cover & microwave on LOW---8-10 min.
