1 cup whole wheat flour
1 cup flour
1 tbsp baking powder
1 tsp salt
1 cup finely grated carrots
1/4 cup packed brown sugar
1/2 tsp cinnamon
1/4 tsp all spice
1 egg
1 cup milk
1/4 molasses
1/4 melted butter

Directions:
Directions:
In a bowl, combine flours, baking powder and salt. Blend in carrots, sugar cinnamon and allspice.

In mixing bowl, beat eggs well, blend in milk, molasses and butter. Add to dry ingredients, stirring just until moistened. Spoon batter into paper lined muffin cups filling each to top of liner. Bake in 400ºF oven for 25-30 minutes or until firm to the touch. Makes about 1 dozen muffins.
