3-4 lb. chuck beef roast
salt to taste
pepper to taste
1/2 c. olive oil
1 c. carrot - chopped
1 c, celery - chopped
1 c. onion - chopped
2 cloves garlic - minced
2 tbsp. parsley - chopped
1 bay leaf
1 tbsp. sage - chopped
3 c. red wine or beef broth
1 28 oz. can tomatoes

salt & pepper meat - heat oil in dutch oven over medium-high heat - brown all sides of the roast - transfer meat to platter - reduce heat to medium add carrot, celery & onion cook until vegetables are golden brown - add garlic, parsley & sage stir until fragrant - add 1 cup of wine stir lifting caramelized vegetables - return meat to pan - raise heat to high add remaining wine, bay leaf and tomatoes bring to a boil - cover & reduce heat to low, simmer until meat is very tender 3-4 hours - serve with rice, mashed potatoes or polenta
