1 1\2 lb red potatoes sliced
8 oz thinly sliced ham
2 poblono peppers (optional)
2 Tbsp olive oil
1 Tbsp dried oregano
1\2 tsp salt
1 c shredded Monterey Jack or pepper jack cheese
2 Tbsp finely chopped fresh cilantro

Directions:
Directions:
Combine potatoes, ham, peppers, oil and salt in slow cooker mix well. Cover, cook on low 7 hours or on high for 4 hours. Transfer to serving dish, sprinkle with cheese and cilantro. Let stand 3 minutes until cheese melts.
