2 1/2 cups flour
1 cup butter or margarine
3/4 cup milk
1 egg
10-12 apples (Macintosh)
1 cup sugar ( can be 3/4 cup)
1 1/2 tsp cinnamon

Directions:
Pre-heat oven to 350ºF.

Pastry
Add 1 cup butter to flour and cut with pastry cutter until coarse texture.
Add yolk of egg to milk and sir. Add milk mixture to flour and blend well. Form dough into a ball with hand. Split dough in half. Roll out dough on floured surface into a rectangular shape that will fit into a cookie sheet. Fold dough gently in half, this will make it easier to transfer to cookie sheet. Unfold dough and make sure it covers the whole cookie sheet and sides as well.

Peel and cut apples and fill the dough covered cookie sheet with these 1-2 inch apple pieces. Mix the sugar and cinnamon and sprinkle over apples, dot with butter.

Roll out the remaining dough into another rectangular sheet to cover the apples. Don't forget to make knife slits in the pastry before laying on the apples, this allows steam to vent out. Beat egg white well and brush pastry top. Sprinkle with sugar. Bake for 35 minutes.
