3 lbs Yams
1/4 cup butter
2 tbsp honey/ or brown sugar
juice of 2 limes
1 1/2 tsp salt

Directions:
Pre-heat oven to 400ºF. Wash yams and poke each one here and there with fork. Place on baking tray with sides and add a 1/2 cup of water to the tray (to prevent yams from drying out). Roast up to 1 hour. Depends on size of yam. When baked, allow them to cool so that they can be handled

Peel the yams, place in a bowl and add all the ingredients. Mash until well combined and season to taster. To reheat, spread in baking dish and bake for 15-20 minutes until heated through, serve hot.
