1/2 c. olive oil
3 tbsp. lime juice
2 whole chipotle peppers in adobo sauce
2 cloves garlic
1 tsp. ground cumin
1 tsp. salt
1/2 tsp. black pepper
6 whole boneless, skinless chicken breasts
6 whole hatch, anaheim or poblano chiles
1/2 lb. monterey jack cheese - sliced or grated
pico de gallo or salsa - for serving
beans - for serving
rice - for serving

marinade for chicken - combine olive oil, lime juice, chipotle peppers, garlic, cumin, salt & pepper in blender mix until pureed - combine marinade & chicken in ziploc bag - place in fridge to marinate for at least 4 hrs. - roast chilies on gas stove top, on the grill or in the oven then place chiles in a ziploc bag for 20 minutes to sweat then remove skins, slice & remove seeds - grill chicken turn over & on cooked side top with chile & cheese - continue to cook chicken & melt cheese - serve with rice & beans
