1 cup Quinoa
1 1/2 cups water
1/2 tsp salt
2 1/2 cups corn, fresh or canned
1 small red onion, minced
1 red pepper, finely chopped
1 ripe avocado
3 tbsp lemon juice
3 tbsp lime juice
3 tbsp olive oil
1 tbsp honey
1/4 cup chopped cilantro
1 tsp salt

Rinse quinoa. Bring water to boil in a small pot, add quinoa and salt and bring to a boil again. Cover and reduce heat to low for 15 minutes. Turn off heat and keep the pot covered for an additional 5 minutes. Mix and cool.

Cook corn if using fresh, until just tender and cool to room temperature. Combine onion, pepper, avocado, corn and quinoa in bowl.

Dressing
Mix the remaining ingredients in a small bowl, and whisk together. Stir into quinoa mixture and chill.
