Ingredients: 4 pounds (2kg) pork 1 tablespoon olive oil 1 tablespoon oregano 1 tablespoon ground cumin 1/2 tablespoon chipotle chili pepper 1/2 tablespoon chili pepper 1-2 teaspoons sea salt 1 teaspoon pepper 2 tablespoon brown sugar 1 onion 6 large garlic cloves 1 jalapeno 1 14oz can crushed tomatoes 2 limes - juice from them 2 ancho chiles (poblano pepper)

Directions:Rinse and dry the pork. Place the pork in slow cooker bowl and add in the oil and all spices and brown sugar rub all over the pork, then top with the onion, garlic and jalapeno and poblano peppers. Add in the tomatoes and squeeze the lime juices over the pork. Mix everything together until well combined.
Cover and cook on low for 8-10 hours or on high for 4-5 hours.
Once the meat is fork tender and falling apart, remove from slow cooker and allow to cool slightly before pulling apart.
Place the carnitas (shredded meat) onto a baking tray, drizzle with sauce from the slow cooker, broil in a preheated oven on medium high settings until golden and crispy. You can also put the carnitas in a fry pan and fry until crispy. |

Notes: Girls you can do this recipe with any type of meat. Carnitas means small crispy pieces of meat so beef, chicken, pork will all work! I like to use flour tortillas with some meat, sauce, sour cream roll up and yummy. You could add this meat to nachos or anything you want. Be adventureous. Very authentic Mexican dish.
