1 hen or large chicken cut up. It takes less time to cook.
Water to cover
1 c flour
3/4 to 1 c water
salt and pepper

Cut up the chicken. Cover the pieces with water and bring to a boil. Turn the heat to low and cook for 45 min to an hour until tender. When the chicken is cooked, removed the pieces from the liquid carefully and put into a bowl or pan to cool. If you want to cool it faster, place in the fridge. Now put the flour into a bowl. Slowly add the flour and stir until it is blended and can be dropped from a spoon, not stiff, but somewhat thicker than a muffin or chocolate chip batter. Drop by teaspoonful into the hot liquid a little at a time and stir, The puffy dumplings will rise to the top. Put a lid onto the pot and simmer for 20 minutes without removing the lid. After 20 minutes remove from the heat and stir. Add salt and pepper to taste. If you want it thinner, you can add a little chicken broth, water or milk. You can cut the chicken or shred and add it to the dumpling mixture.

I like to add my chicken to the dumpling mixture. You can also pressure cook the chicken. I fry or bake cornbread to go with it. When company comes, I fix some green beans to go with the dinner.
