1/2 C Butter
1 Onion ( Large ) - small dice
1/2 C Carrot - small dice
1/2 C Celery - small dice
1/2 - 1 C AP Flour
2 C Chicken Stock
1 12 Oz. Beer ( Sierra Nevada Pale Ale )
7 Oz. Sharp Cheddar ( grated large holes )
7 Oz. Gruyere or generic Swiss ( grated large holes )
( Cheeses can vary )
2 C 1/2 & 1/2
1/2 t Coleman's yellow mustard
1/2 t Worcestershire
salt and pepper
1 # Polish Sausage

Melt butter - medium heat
- add onion, carrot and celery , sauté until soft ( do not brown ) ~ 15 min or so
- add flour stir 5 min , ( turn down heat if necessary to avoid scorching )
- add chicken stock and beer, bring to a boil
- slowly add cheese until just boiling watch for smooth consistency
- add 1/2 & 1/2 , mustard, Worcestershire , salt and pepper
- reduce heat until thickened
- taste and correct for seasoning and consistency , if too thick add chicken stock or milk, taste wise use salt and pepper, add more mustard or Worcestershire if desired.
- cut sausage into 1/4 " or so semicircles , sauté in separate pan , drain oil from pan and add to soup .
