4 T fat from the turkey
6 T flour
4 c broth

Heat the fat in a saucepan over medium heat until hot. Whisk in the flour until blended and cook for two min or so until it is a light brown and stir constantly. Bring to a boil and boil for about 2 minutes while stirring and until it is thickened. Add salt and pepper to taste. This will be a thing gravy and for thicker add a half t or 1T more of flour for each two c of gravy you make.

If you are using fat from your turkey then you can use those drippings and chicken broth or the broth you have made with the neck, liver and gizzard and add any canned broth that you need to make 4 cups. You can also use butter or oil for your fat if you want instead of drippings. To have less gravy just half the recipe and for more double. I always have to double. The hotter the fat the quicker the flour will cook, but needs to be for at least two minutes so you do not get the raw flour taste.
