1 3/4 c self rising flour
not quite a 1/2 c sugar
2 eggs lightly beaten
2/3 c milk
1/3 c butter melted
1/3 c of your favorite jam

Directions:
Directions:
Preheat oven to 400º. In a large bowl, combine flour, sugar and mix. In another bowl, add the beaten eggs, milk and butter and stir. Pour dry ingredients into the wet ingredients until moistened. Grease 12 muffin cups or line with paper cups and spoon half the batter into each cup/ Make a well in the center of them and add a scant teaspoon to each. If you have any jam left, can add evenly with the muffins until used. Spoon the remaining batter over the jam. Bake for 20-25 minutes or until golden.
