1 cup butter ■ 1 onion, diced ■ 2 cups celery, diced ■ 2 tsp poultry seasoning ■ 3 quarts bread, cubed and dried ■ 1 egg ■ 1-1 1/2 cups water

Directions:
Directions:
Melt 1/4 cup butter and saute celery and onion. Add rest of butter and seasonings. Once butter is melted, add half of the bread and stir well cooking until browned (about 4 minutes). In a measuring cup, whisk egg and water. Add mixture to remaining bread and stir with a fork. Gently combine sauteed bread and egg mixture bread. Helen would have piled this into her turkey. Alternatively, place in greased baking dish and cook for the last 45 minutes or so of the turkey cooking (covered), stirring occassionally and adding additional chicken broth as needed.
