1 c. (2 sticks) salted butter, room temperature
1 c. brown sugar, packed
1 c. granulated sugar
2 large eggs
1 tsp. vanilla extract
2 c. sifted all-purpose flour
1 tsp. baking powder
1 tsp baking soda
1/4 tsp salt
2 c. old fashioned oatmeal, such as Quaker
1 c. chopped pecans
1 c. grated coconut

Directions:

Preheat oven to 375F

In an electric mixer, cream the butter and the sugars. Add the eggs and vanilla and beat well. Sift together the flour, baking soda, baking powder, and salt, and add to the butter mixture. Add the oatmeal, nuts and coconut.

Drop the dough by teaspoonfuls onto ab ungreased baking sheet 2 inches apart. Bake for 9 minutes, or until light brown. Cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely. The cookies will be chewy.
