3 cups flour
2 cups sugar
1 tsp cinnamon
1 tsp baking soda
1 tsp salt
3 eggs
1 1/2 cups vegetable oil
1 1//2 tsp vanilla
1 8 oz can crushed pineapple, undrained
4 or 5 ripe bananas
1 cup coconut
1 cup nuts

Directions:

Sift and mix dry (first 5) ingredients. Add eggs and mix well. Stir in bananas, coconut and nuts and mix again. Pour into greased and floured Bundt pan. Bake at 350 for 1 hour 15 minutes. Insert toothpick to test for doneness.

This is a family favorite made famous by my great, great Aunt Freda Ward Watson.

It's very thick and lumpy looking when you mix it up but truly delicious. Sweet enough to be served as is, but also good topped with a bit of Cool Whip or whipped cream.
