4-6 potatoes, pealed and cut into large cubes
1 med or 1.5 TBSP dried onion
2 cups cheese
2 cans evaporated milk or 3 cups milk
Garlic salt
Pepper

Directions:
Directions:
Boil potatoes and onions until tender.
Drain most of the water.
Add milk, cheese, salt and pepper.
Simmer over a low heat until cheese is melted.
Garnish with chopped green onions, if desired.

Serve with rolls and/or bread slices.

This dish was made for Brent and Michelle while visiting Uncle Jim and Aunt Terry in Utah. They invited us for dinner but I think they forgot...when we arrived, with my brother Marc, Terry and Jim rushed into the kitchen, worked together to whip this soup up for us, while we visited. It was a great soup, wonderful conversation and a tender memory.
