1 tbsp olive oil
1 chopped onion
2 garlic cloves, crushed
1 tbsp freshly grated ginger root
2 tbsp red curry paste
1 3/4 cups coconut milk
1 cup hot vegetable stock
1 tsp sugar
1 tbsp Thai fish sauce
3 sweet potatoes peeled and diced
salt and pepper
fresh spinach

Directions:

Heat oil in large, heavy saucepan. Add the onion and cook for 3-5 minutes, until softened. Stir in the garlic and ginger, followed by the curry paste, and cook for 1 minute. Add the coconut milk, stock and sugar, fish sauce and bring to boil.

Add the sweet potatoes to the pan and simmer for 10 minutes, until tender. Add handful (1-2 cups) of spinach, simmer for a few minutes. Can be served over rice or noodles.
