1 1/2 cups ground crispy ginger cookies
1/4 melted butter
250 g pkg cream cheese
1 lemon
3/4 cup icing sugar
1 cup whipping cream
1/4 cup chopped crystallized ginger
6 ripe nectarines

Directions:
Directions:
Place ground cookies in bowl and melted butter, stir well and then press in bottom and up sides of 9 inch pie plate . Chill for 10 minutes.

Filling. Beat cream cheese well in large bowl. Add finely grated lemon peel and 2 tbsp freshly squeezed lemon juice, mix well. Clean beaters, beat whipped cream until peaks form. Fold cream into cream cheese along with ginger. Spread into bottom of chilled ginger crust and refrigerate until read to use. Shortly before serving arrange peeled and sliced fruit on ginger cream. Keep chilled until ready to serve.
