2 c. dry Great Northern beans
2 qts. water
1 yellow onion (chopped)
2 stalks celery (chopped)
1 green pepper (chopped)
2 cloves garlic (crushed)
½ c. water
1 ½ c. bean-cooking liquid
1 ½ tsp. parsley flakes
2 Tbsp. parsley flakes
2 Tbsp. lemon juice
1 Tbsp. low-sodium soy sauce
Ground black pepper to taste

Directions:
Directions:
Cook beans in 2 quarts water until tender, about 2 hours. Drain, reserving liquid. Preheat oven to 350º. Sauté the onion, celery, green pepper, garlic in ½ cup of the bean-cooking liquid. Pour into a casserole.
