1 - 1 ½ lbs. lean boneless meat (partially frozen)
¼ c. soy sauce
1 Tbsp. Worcestershire sauce
¼ tsp. pepper
¼ tsp. garlic powder
½ tsp. onion powder
1 tsp. hickory smoke flavored salt

Directions:
Directions:
Trim and discard all fat from the meat and cut into ½" to ¼" slices. In a bowl, combine soy sauce, Worcestershire sauce, pepper, garlic powder, onion powder, and salt. Stir. Add meat strips and mix. Let stand for 1 hour or cover and refrigerate overnight. Shake off any excess grind. Arrange meat on oven racks. Dry at lowest possible oven temperature for 4 to 7 hours. Pat off any beads of oil. Store in airtight plastic bags or jars.
