Ingredients:  
2 cups of mashed summer squash well drained in one large bowl.
Mix next 7 ingredients in a separate bowl and fold into the mashed summer squash.
2 eggs well beaten
1/4 lb. sharp cheddar cheese grated
1 lg. onion finely chopped
3/4 C milk, heat to just boiling
1 T. butter
4-5 slices of freshly sliced bread crumbled
S&P to taste

Put the mixed summer squash into a baking pan or oven proof casserole dish.
Bake at 350º for 45 min.

Ruth Ella comments that it puffs up like a soufflé and will keep for 30 min while you enjoy your cocktails. ( This recipe was given to Grammy in the 1960's when she and Grampy were good friends with Doc and Ruth Ella Larsh from Chapel Hill N.C. (Bob Larshes parents)
