1 lb sharp cheddar cheese (New York St sharp)
4 cups flour
3 sticks butter
red pepper to taste (1 tsp red and 1 tsp cayenne)
1/4 tsp black pepper
2 tsp salt

Grate cheese - mix in flour and butter - mix well. Put through cookie press. Bake 375 degrees - 10 minutes on ungreased cookie sheet

This recipe is actually Aunt Ruth Thomas' - Big JIm's sister - She was a special lady. I had the privilege of knowing her briefly before she passed away. DeeDee made these cheese straws for many many years every Christmas. I have never really tasted any that were as good as these. DeeDee had this one down perfectly! DeeDee's cookie press made the straws in a flatter press - about an inch wide and 1.5 inch long - I think that was the secret to their taste!
