Ingredients: 1 1/2 cups freshly mashed potatoes (about 3 medium potatoes) 2 cups smoked salmon, flaked with fork 1/4 cup onion finely grated 1 egg lightly beaten 1 1/2 cups fresh white breadcrumbs 1/2 teaspoon freshly ground black pepper oil for frying, about thee inches deep in frying pan

Directions: Combine 1/2 cup bread crumbs and rest of ingrdients except for oil
Shape mixture into a two tablespoon ball about one inch thick
Roll each in remaining cup of bread crumbs, coating each one evenly
Place on wax paper and refrigerate for an hour to set
Pour oil into frying pan and heat to appoximately 350º
Fry 6 at a time, frying about 4 minutes, turn to be sure brown on all sides Drain on paper and serve hot |
